Easy and Delicious Cake

I have dabbled in quite a bit of cake making and decorating. I’ve made birthday cakes and wedding cakes. The best cake that I think I’ve ever tried is an orange cake. Now, I know that doesn’t sound all that fancy or that it would be the tastiest cake ever but take my word for it. Put aside the fact that everyone has different taste buds and preferences and just go for it.

Every friend and family member that has tried this cake has told me how delicious it is.  Even one of my brothers that doesn’t even like cake.

It’s actually a pretty easy recipe as well. Cream your butter and sugar. Add orange extract, eggs, etc. When you add the milk make sure than you add it very slowly. The batter wontcompletely mix in if you add it to fast. You’ll end up with thick cake batter on the edges that doesnt want to mix into the thin. Then comes the secret ingredient. Orange marmalade jam. It adds extra moisture and tastes delicious! Especially with a buttercream frosting!

Orange Cake Recipe

2 cups white sugar

1 cup butter

4 eggs

2 TB Orange extract

3 cups Flour

3 tsp baking powder

1 cup milk

1 1/2 cups orange marmalade jam

preheat oven to 350.  If you want the cake to rise mostly flat adjust to 325 and cook longer.

Grease 2 9″ circular pans or one 9 x 13 pan.

cream together the sugar and butter.  Beat in the eggs, one at a time then add orange extract.  In a small bowl combine flour and baking powder then add to mixture and mix well.  Very gradually, add the milk while continuing to mix.  mix in the jam.

Bake for 30 to 40 min or until toothpick comes out clean.
